This school is INCREDIBLE! Seriously, I love, love, love the opportunities given to experience different techniques (shaping before and after refrigeration etc.) A fabulous way to learn.
Ohhhh no, but oh yes—a discovery: Maritozzi! Could you make a glossary of baked goods by country, Maddie? I'm sure there's a world and journey of discoveries to be made as you make them—I'm losing track! (especially those with oranges, vanilla and fruit!) ;-)

I work with clients who prep for business/marketing/leadership interviews (my small company and passion is mentoring), so now I'm wondering how you have to prepare, the criteria, culture, and format - given all you've experienced before it'd be interesting to hear your compare/contrast!!
